NOCINO (OLOROSO SHERRY CASK FINISH)
An Oloroso Sherry Cask Finish of our 2022 vintage Nocino
THE STORY
Following the launch of our 2022 vintage Nocino, we rested 100litres in stainless steel with Oloroso Sherry Cask chips for six months, culminating in the first aged spirit from The House of Botanicals.
Though walnut liqueurs are known across the world – as Brou de Noix (France), NutZino (New Zealand), and Nucata (Romania) – Nocino (pronounced no-CHEEN-oh) is most commonly associated with and consumed in Italy as a digestif. It is believed to have origins in the northern and eastern parts of the Kingdom of Alba (now Scotland), with the earliest records linked to the Pictish people who consumed it as a restorative tonic, for its perceived medicinal qualities, and as a digestive aid.
Produced with Green Walnuts from Potash Farm in England, our 2022 vintage was macerated in alcohol for no less than forty days, before being seasoned with natural Coffee Beans, Star Anise Pods, Cloves and Demerara Sugar, then rested for a further six months with Oloroso Sherry Cask chips to create a spiced, balsamic and bittersweet liqueur.
We believe it is best enjoyed neat, over ice, with a cheeseboard, or in variants of Cocktails, Highballs, Flips and Liqueur Coffees, though we do always suggest you share it with your nearest and dearest.

TASTING NOTES
Nose: Dry aromatic spice, roasted cacao & coffee, fresh cracked walnuts, oak, and a hint of clove
Taste: Sticky mouthfeel, bittersweet with rich aromatic coffee, tobacco, leather, dark chocolate and elegant spice balanced alongside autumnal spicy walnut
Finish: Bittersweet, indulgent, and everlasting with intense nuttiness and spice

RECOMMENDED SERVE
Fairbanks Cocktail
- 60ml / 2oz Rye Whiskey
- 10ml / 0.33oz Apricot Brandy
- 5ml / 0.5oz Pietro Nicola Nocino
- 3 Dashes Dr. Adam’s Boker’s Bitters
Add all ingredients to mixing glass, fill with cubed ice and stir for 15-20 seconds. Strain into a chilled cocktail glass and garnish with a snap of fresh lemon zest
